A quick one-pot recipe for the whole family with potatoes, vegetables and chicken breast.

Chicken breast on thyme jacket potatoes is my first recipe from the OptiGrill baking tray.

This is a one-pot recipe, which is all prepared directly in the OptiGrill baking tray.

The potatoes are cooked along with their skins, which is a huge time-saver. And when everything is chopped, the Optigrill makes the chicken on thyme baked vegetables almost all by itself.

The recipe has now been prepared in the large baking dish (XL). I have put this quantity in brackets so that you can also make the smaller version of this recipe.

Ingredients:

3-4 (2-3)** chicken breast fillets (approx. 900g/750g**)
600g (400g)** small potatoes (“triplets”)
2 peppers (yellow/red)
2 small garlic cloves
5 (3)** tsp olive oil
2 tsp thyme (fresh or dried)
8 (6)** sprigs fresh thyme
2 (1)** tsp paprika powder
Salt
Pepper

Preparation:

Wash the chicken breast fillets, pat dry and, if necessary, remove the skin and tendons.

Wash the potatoes and cut them into quarters lengthwise. Peel and finely chop the garlic cloves. Wash the peppers, remove the seeds and cut into small strips.

3 (2) tsp of oil with garlic and thyme in a bowl. mix. Add salt and pepper. Add the vegetables, mix well.

Mix the remaining oil with the paprika powder in the same bowl, mix. Add salt and pepper. Add the chicken breast fillets and mix until the meat is completely coated with the paste

Insert the baking tray into the OptiGrill. Switch on the OptiGrill. Set manual mode to 230°. The OptiGrill is preheated. As soon as preheating is complete, the appliance beeps 3 times.

Pour the vegetables into the baking dish and spread them out so that the meat can be placed in between.

Place the marinated chicken breast between the vegetables in the baking dish.

Place 1-2 fresh thyme sprigs on each piece of meat.

Close the OptiGrill. Set the timer to 25 minutes. Then raise the OptiGrill to 270°. Set the timer to 5 minutes and brown the meat.
