The great meatball casserole

Meatball casserole for the whole family.

Since this meatball casserole is prepared in the large Omnia Maxi Mould, which has a capacity of 3 litres, even the family of 4-5 will now be satisfied.

Even children who don’t like to eat vegetables are delighted with this casserole. The meatballs not only make the children’s eyes light up, but also every mum who is happy that her children are finally eating vegetables – even if the vegetables are rather “hidden” under the meatballs 😁.

In this recipe, the meatballs are fried separately in a pan. The potatoes, on the other hand, are roasted directly in the Omnia Maxi Mould.

Hackbällchen Auflauf Maxiform Omnia Backofen

Ingredients:

200g feta cheese
650g small potatoes
6 tbsp olive oil
600g-700g minced meat, mixed
1 Egg
2 Toast slice
250g courgettes
150g cocktail tomatoes
1 Paprika, yellow
1 Paprika, yellow
1⁄2 bunch thyme
Juice of 1⁄2 lemon
Salt
Pepper

Paprika powder, sweet

Preparation

Wash the potatoes thoroughly and cut them in half lengthwise. Mix in a bowl with 2 tbsp olive oil, salt and pepper. Spread the potatoes in the Omnia dish and pre-cook on a medium flame for 25 minutes.

Wash the remaining vegetables.

Remove the seeds from the pepper. Cut the courgette and pepper into approx. 1 cm cubes. Halve the cocktail tomatoes. Mix the vegetables in a bowl (the bowl from the potatoes). Wash the thyme, shake dry and pluck off the leaves. Add the plucked thyme leaves to the vegetables.

Squeeze the lemon. Add the juice of the squeezed lemon and 2 tbsp olive oil. Season well with salt and pepper. Now let everything steep.

Soak the toast slices in a little water. Knead the minced meat with the egg, salt, pepper, paprika powder and the squeezed out toast. Form approx. 9 medium-sized meatballs from the minced meat.

Heat the remaining oil in a frying pan and brown the meatballs all over.

Spread some of the marinated vegetables over the potatoes and crumble 1/3 of the feta cheese on top. Now place the meatballs on top. Spread the rest of the vegetables around.

Crumble the remaining feta cheese over the top and bake everything for 15-20 minutes on a medium flame.
