Tuscan chicken – an easy one-pot recipe from the Omnia oven

What better way to describe Tuscan chicken than as an Italian pleasure trip? With olive oil, rosemary, oregano, basil and tomatoes, it literally screams Italy.

But with the potatoes, it’s probably more like a German-Italian friendship.

This recipe shows once again how easy it is to prepare in the Omnia oven.

The Tuscan chicken can be prepared in no time at all and the many herbs mean that it can be enjoyed in no time at all.

This recipe is once again a delicious one-pot recipe for the Omnia oven, where you don’t have to fry anything. Simply pour everything into the Omnia baking dish.

Toskanisches Huhn | One-Pot aus dem Campingbackofen


3-4 chicken breast fillets
500g potatoes (“triplets”)
100g cocktail tomatoes
1 tsp broth
3 tsp rosemary, fresh or dried*
3 tsp oregano, fresh or dried*
3 tsp basil, fresh or dried*
3 tbsp olive oil*
2 tbsp tomato puree
100ml water


For the Tuscan chicken, wash the potatoes and cocktail tomatoes and pat dry. Cut the unpeeled potatoes into quarters lengthwise, mix with the oil and spread in the Omnia dish. Cut the tomatoes in half and place on top. Season well with salt.

In a bowl, mix the water with the stock, tomato purée and 1 teaspoon of each herb. Season with salt and pepper and pour the sauce over the vegetables.

Wash the chicken breast fillets, pat dry and cut in half. Season with salt and pepper. Place on top of the vegetables

Mix the remaining herbs and sprinkle over the meat.

If using fresh herbs, wash, spin dry and finely chop them.

Cook the Tuscan chicken for 2 minutes on a high heat and 40 minutes on a medium heat.

If you suffer from histamine intolerance, you can replace the tomatoes with zucchinis.
