Potato and broccoli casserole - a vegetarian side dish without pre-cooking!

We regularly serve the potato and broccoli casserole as a barbecue side dish. While Frank prepares the steaks and sausages on the barbecue, I put the potato and broccoli casserole on the gas hob.

Because the best thing about this casserole: NOTHING is pre-cooked! Put everything directly into the oven and onto the gas hob.

Our Josy has loved broccoli since she was little. That’s how this casserole was created. I think casseroles with potatoes can be wonderfully varied. You can turn a simple, creamy potato gratin into a great casserole – top with cheese and you’re done!

I also change this potato and broccoli casserole again and again. Sometimes I swap the broccoli for cauliflower or there is a variation with Kaiser vegetables. Incidentally, I got this idea from Ingrid from my Facebook group 😁.

What I always make on this call, however, are roasted almond flakes. I love these crunchy, lightly roasted almonds. They give the casserole a real kick and a little eye-catcher. It is of course not a “must”, but a “can” 😁. The potato and broccoli casserole tastes delicious even without roasted almonds.

Kartoffel-Brokkoli-Auflauf | Beilage aus dem Campingbackofen

Ingredients:

500g potatoes
500g broccoli
300ml warm water
1 ½ tsp stock
4 tablespoons cream cheese
2 tsp cornflour
2 tbsp crèmefine for cooking/cream/milk
70g grated cheese
2 tbsp Parmesan cheese
Salt
Pepper
Curry

Preparation:

Wash the broccoli and remove the florets with a knife. As the broccoli stalk is edible, you can peel it and either finely chop it with a large knife or use a blender.

Peel and wash the potatoes. Then cut or slice into thin slices (approx. 3 mm). After cutting/slicing, do not wash the potatoes, as the potato starch that is released is needed to bind them.

Place one layer of potato slices in the baking dish. Spread the chopped broccoli stalk on top and place the remaining potato slices on top.

Spread the broccoli florets over the potato slices.

Mix the warm water with the stock, cream cheese, cornflour and milk. Season with salt, pepper and curry. Pour the sauce over the potato and broccoli casserole.

Sprinkle cheese on top.

Potato and broccoli casserole 3 minutes on full heat. Then cook for 40 minutes on a medium heat.

If required, toast 3 tablespoons of sliced almonds without fat in a pan and sprinkle over the casserole.

Tip:
Simply swap the broccoli for cauliflower or “Kaiser vegetables”. ‘Kaiser vegetables’ are a crunchy mix of broccoli, cauliflower and carrots and turn your potato and broccoli casserole into a super tasty potato and vegetable casserole. Variety is as easy as that 😉.

Note on camping ovens from ENDERS or PETROMAX:

Please note that these camping ovens do not have a silicone mold. Here you have to fill the dough directly into the non-stick coated mold.

With the Petromax, it may slightly increase the cooking/baking time as the Petromax is made of stainless steel and therefore requires a slightly longer cooking/baking time.

In both the Enders camping oven and the Petromax camping oven, you should always bake cakes on a very low flame to ensure that your baking results are successful.
