Almond and carrot cake

The almond and carrot cake is not only very popular at Easter time, but is always a great addition to your cake table. You can adapt the cake decoration to suit your mood.

The beaten egg whites and the addition of grated carrots make the almond and carrot cake really light and moist.

350g carrots
50g butter
4 eggs
160g sugar
2 tsp vanilla sugar
200g ground almonds
1/2 teaspoon cinnamon
1 lemon (unsqueezed)
Pinch of salt
80g flour
1 teaspoon baking powder
200g chocolate (milk/dark/white)
1 teaspoon of butter

Peel and finely grate the carrots.

Separate the eggs. Beat the egg yolks with about ¾ of the sugar (you don’t need to be precise, as the rest is needed to make the egg whites stiffer) and the vanilla sugar until creamy. Stir in the soft butter and whisk vigorously.

Grate the lemon zest. Squeeze the lemon.

Add the carrots, ground almonds, cinnamon, lemon zest and lemon juice and mix lightly.

Beat the egg whites with a pinch of salt until very stiff. Slowly trickle in the remaining sugar.

Mix the flour with the baking powder and fold into the carrot mixture with a dough scraper, alternating with the egg whites.

Grease the Omnia mold or use the silicone mold. Pour in the batter. Almond and carrot cake 45 minutes
Bake on a low heat. Turn off the gas and leave to rest for a further 10 minutes with the lid closed.

Melt the chocolate with the butter in a hot water bath. Cover the cake with it and decorate with chopped hazelnuts, grated coconut, cream or marzipan carrots if desired.
